Ingredients
- 2 cans black-eyed peas, drained and rinsed
- 2 - tomatoes, chopped
- 1 medium sweet onion, finely chopped
- 8 ounces italian dressing
- 1/2 medium bell pepper, finely chopped
- 1 dash cayenne pepper
- 2 - avocados, peeled, pitted, chopped
- 1 bunch cilantro, fresh, chopped

Step 1In large bowl, mix black-eyed peas, tomatoes, onion, bell pepper, Italian dressing, and cayenne pepper. Refrigerate overnight. Stir in avocados, and sprinkle on cilantro just before serving. Serve with your favorite tortilla chips.
