    black-eyed peas, drained and rinsed
  • 2
    tomatoes, chopped
  • 1 medium
    sweet onion, finely chopped
  • 8 oz
    italian dressing
  • 1/2 medium
    bell pepper, finely chopped
  • 1 dash(es)
    cayenne pepper
  • 2
    avocados, peeled, pitted, chopped
  • 1 bunch
    cilantro, fresh, chopped

How to Make Texas Caviar

Step-by-Step

  1. In large bowl, mix black-eyed peas, tomatoes, onion, bell pepper, Italian dressing, and cayenne pepper. Refrigerate overnight. Stir in avocados, and sprinkle on cilantro just before serving. Serve with your favorite tortilla chips.
