In Hawaii, SPAM is known to the locals as a major staple food. I put together a few of my favorite ingredients together with SPAM and created a colorful SPAM-pattie!

Ingredients
- 2 cups carrot, peeled and chopped
- 5 cups potatoes, peeled and chopped then mashed
- 1 bunch green onions, thinly sliced
- 1 1/4 cups sweet onion, peeled and diced
- 2 cups celery
- 2 small eggs
- 2 cups shitake mushrooms, hydrated and sliced
- 1 cup fishcake, any and chopped
- 2 cans spam, 25% less sodium or lite
How To Make spamatties

Step 1Peel and chop potatoes. Add to pot of boiling water with a pinch of salt and boil until tender.

Step 2While potatoes are boiling, add to first mixing bowl the carrots, sweet onions and celery then place bowl to the side.

Step 3Add to second mixing bowl the mushrooms, mashed SPAM, fishcake, eggs and green onions and completely mix ingredients together.

Step 4Grab first mixing bowl and slightly saute ingredients until beginning to become translucent and remove from heat. Once your mirepoix has cooled, you may add it to your second mixing bowl.

Step 5Potatoes should be done by this time if not done already and should also be removed from heat. Drain potatoes and begin mashing. After you have completed mashing all the potatoes, add to other ingredients.

Step 6Take 1/8 cup and tightly squeeze mixture and form to make patties.

Step 7After all patties have been made, place patties in a hot lightly oiled or PAMmed frying pan and give each side a light sear for coloring. Plate and serve.
