This is a great recipe that disappears fast when slightly warm. It can be gluten free or not, you decide. This recipe is light on the spinach.

Ingredients
- 2 tablespoons butter
- 5 - eggs large
- 1 cup flour, bisquick or bisquick gluen free
- 3/4 cup milk
- 1 teaspoon baking powder
- 1 pound cheddar cheese shredded
- 1 package chopped spinach 10 oz.
- 2 tablespoons onion minced
- 1/2 pound breakfast sausage browned
How To Make roxy's spinach squares

Step 1Brown Sausage. Place butter in 13x9 pan and warm in oven to melt, take out of oven. Chop spinach until very fine and blot out water with a towel.

Step 2Beat eggs with mixer until frothy then add milk and all other ingredients and stir until mixed.

Step 3Pour in 13x9 with butter and bake at 350 degrees for 35 minutes or lightly browned on top. Cool slightly and cut into squares.

Step 4Notes: I like the gluten free. I still used the baking powder. I use any left over cheese in the fridge as my sister suggested. Colby Jack is good. Also I used Jimmy Dean sausage but my sister uses a turkey sausage. Enjoy.
