I discovered this recipe from Chocolate covered Katie's blog. FANTASTIC recipe! A great way to serve healthy pizza bites at your next gathering! Everyone enjoyed these delicious bites! Serve with your favorite pizza sauce for dipping.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup pinto beans
  • 1/2 cup tomato paste
  • 2 teaspoons basil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • - small chunks of mozzarella cheese

How To Make quinoa pizza balls

  • Step 1
    Preheat oven to 350 degrees. Grease a sheet for baking the balls.
  • Step 2
    Mash pinto beans well. Stir in remaining ingredients and mix till smooth. Roll into balls. Make an indent in the middle of each ball and wrap the "dough" around a small chunk of mozzarella cheese.
  • Step 3
    Place on greased pan and bake for about 30 minutes or until slightly crispy.
