Pesto Pea Mousse Stuffed Cherry Tomatoes
1 lbfrozen sweet peas
1 pkgcream cheese,low fat or fat free room temperature
1 Tbspolive oil, extra virgin
1/2 cnuts of choice
2 pkgfresh cherry tomatoes
1/2 cfresh basil leaves
How to Make Pesto Pea Mousse Stuffed Cherry Tomatoes
- Take Peas out of the freezer, set aside.
- Clean and cut the top off each of the cherry tomatoes. Scoop a tad out of each. Set in dish, standing up
- In a food processor, put all your ingredients, except the tomatoes. Pulse till smooth
- Place the processed mix into a plastic bag. Squeeze to one end, snip the corner off of the bag, making a piping bag out of it.
