Who doesn't love Gruyere cheese, bacon, and the sweetness of caramelized onions? Put them together and you have one kickin' spread that your guests will never forget! This is a simple dish that may be prepared in advance and baked a few minutes before your guests arrive. If you cannot find the Gruyere, you may substitute with Fontina or even Swiss cheese. Gruyere is a creamy and savory cheese with a distinctive but not over powering flavor. Fresh gruyere will have a slightly nutty flavor and aged will taste a bit sharper.

  • cooking spray to coat skillet
  • 1 Tbsp
    butter
  • 3 1/2 c
    chopped white onions
  • 1/2 c
    (4 oz ) gruyere cheese, shredded and divided
  • 2 Tbsp
    fresh chives, chopped and divided
  • 1/3 c
    mayonnaise
  • 1/3 c
    sour cream
  • 1/4 tsp
    of both salt and pepper
  • 4 slice
    bacon, cooked and crumbled

    Preheat oven to 425 D. Heat a large (cast iron is preferable) skillet over medium high heat. Coat lightly with cooking spray. Melt butter. Add onion to pan; saute for 5 minutes, stirring frequently. Reduce heat to low, cook 20 minutes or until golden, stirring occasionally. Cool slightly.

    Combine 6 tablespoons of cheese, caramelized onions, 1 tablespoon chives, and all remaining ingredients in a medium bowl.

    Transfer the mixture to a 1 quart glass or ceramic baking dish that is lightly coated with cooking spray. Sprinkle with the remaining 2 tablespoons of cheese. Bake @ 425 D for 20 minutes or until browned and bubbly. Sprinkle with remaining 1 tablespoon of chives. SERVING NOTE: Serve with toasted baguette slices or your favorite crackers.
