hot gruyere, bacon, and caramelized onion spread
Who doesn't love Gruyere cheese, bacon, and the sweetness of caramelized onions? Put them together and you have one kickin' spread that your guests will never forget! This is a simple dish that may be prepared in advance and baked a few minutes before your guests arrive. If you cannot find the Gruyere, you may substitute with Fontina or even Swiss cheese. Gruyere is a creamy and savory cheese with a distinctive but not over powering flavor. Fresh gruyere will have a slightly nutty flavor and aged will taste a bit sharper.

Ingredients
- - cooking spray to coat skillet
- 1 tablespoon butter
- 3 1/2 cups chopped white onions
- 1/2 cup (4 oz ) gruyere cheese, shredded and divided
- 2 tablespoons fresh chives, chopped and divided
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/4 teaspoon of both salt and pepper
- 4 slices bacon, cooked and crumbled

Step 1Preheat oven to 425 D. Heat a large (cast iron is preferable) skillet over medium high heat. Coat lightly with cooking spray. Melt butter. Add onion to pan; saute for 5 minutes, stirring frequently. Reduce heat to low, cook 20 minutes or until golden, stirring occasionally. Cool slightly.

Step 2Combine 6 tablespoons of cheese, caramelized onions, 1 tablespoon chives, and all remaining ingredients in a medium bowl.

Step 3Transfer the mixture to a 1 quart glass or ceramic baking dish that is lightly coated with cooking spray. Sprinkle with the remaining 2 tablespoons of cheese. Bake @ 425 D for 20 minutes or until browned and bubbly. Sprinkle with remaining 1 tablespoon of chives. SERVING NOTE: Serve with toasted baguette slices or your favorite crackers.
