Ingredients

  • 1 can(s)
    black beans, drained
  • 1 can(s)
    pinto beans, drained
  • 1 can(s)
    kidney beans, drained
  • 1 can(s)
    black eyed peas, drained
  • 1 can(s)
    corn, drained
  • 1 c
    celery, chopped
  • 1 c
    onion, chopped
  • 1 c
    peppers, sweet-colored, chopped
  • MARINADE

  • 1/2 c
    apple cider vinegar
  • 1/4 c
    vegetable oil
  • 1/2 c
    sugar

How to Make Hearty Bean Salad

Step-by-Step

  1. Mix beans and vegetables in large container with cover.
  2. Bring oil, sugar, and vinegar to a boil and simmer for 2 minutes.

    Pour mixture over beans and vegetables. Refrigerate for at least 3 hours, stirring occasionally.
  3. Serve as a bean salad, or as an appetizer with baked tortilla chips.
