donna's cucumber dip
This is such a light and refreshing dip - make sure to make a double batch because it goes fast. I like this with white corn chips.

Ingredients
- 1 - peeled & seeded english cucumber, finely grated
- 1 package (8 oz) cream cheese, softened
- 1 1/2 tablespoons onion, grated
- 1/4 teaspoon cayenne pepper (or more to taste)
- 1 teaspoon dried dill weed (or more to taste)
- 3 tablespoons mayonnaise
- 2 teaspoons lemon juice
- - salt to taste
- 1 - drop green food coloring (optional)
How To Make donna's cucumber dip

Step 1Peel, quarter and remove seeds from cucumber. Use a fine grater and grate the cucumbers.

Step 2Drain all water from cucumbers, make sure no moisture is left. I put the grated cucumbers in several layers of paper towels and squeeze the liquid out.

Step 3Mix all ingredients together and refrigerate at least 4 hours.

Step 4Garnish with fresh dill leaf. Serve with pita or white corn chips.
