I started growing cucumbers in the garden this year and needed a quick and new way to enjoy the fresh flavors. I also like to mix in some rice noodles for a different twist. It goes really well with just about anything you pack up for a picnic. It will keep in the fridge for up to two weeks.

Ingredients

  • 2 large cucumbers
  • 1/3 cup rice vinegar
  • 3 teaspoons sugar
  • 1/2 teaspoon kosher salt
  • 1 tablespoon hoisin sauce
  • 1 1/2 teaspoons fresh ginger - minced
  • 1/3 cup pickled ginger - cut in thin strips
  • 1/2 cup chopped peanuts - for garnish

How To Make cucumber aeru

  • Step 1
    Cut cucumbers in half lengthwise and scoop out seeds. Cut crosswise into thin slices
  • Step 2
    in a bowl, combine vinegar,hoisin,sugar,salt and fresh ginger, mix well. Add cucumbers, coat well with the mixture. Cover and place in the fridge for at least 1 hour to chill and marinate flavors.
  • Step 3
    Toss again and add pickled ginger and crushed nuts to taste.
