I started growing cucumbers in the garden this year and needed a quick and new way to enjoy the fresh flavors. I also like to mix in some rice noodles for a different twist. It goes really well with just about anything you pack up for a picnic. It will keep in the fridge for up to two weeks.

1/3 c
rice vinegar
3 tsp
1/2 tsp
kosher salt
1 Tbsp
hoisin sauce
1 1/2 tsp
fresh ginger - minced
1/3 c
pickled ginger - cut in thin strips
1/2 c
chopped peanuts - for garnish

How to Make Cucumber Aeru


  • 1Cut cucumbers in half lengthwise and scoop out seeds. Cut crosswise into thin slices
  • 2in a bowl, combine vinegar,hoisin,sugar,salt and fresh ginger, mix well. Add cucumbers, coat well with the mixture. Cover and place in the fridge for at least 1 hour to chill and marinate flavors.
  • 3Toss again and add pickled ginger and crushed nuts to taste.
