caprese pepper poppers
A twist on regular jalapeno poppers; very easy. Tastes like a pizza in a jalapeno popper :)

Ingredients
- 5 - jalapeno peppers
- 8 ounces mozzarella cheese
- 8 ounces pepperoni
- 1 pint cherry tomatoes, diced
- 1 tablespoon oregano, divided
- 1 bunch fresh basil
How To Make caprese pepper poppers

Step 1Preheat oven to 375.

Step 2Slice peppers lengthwise and scoop out seeds and veins.

Step 3Slice pepperoni slices in half and line the along the sides of the peppers. Add diced tomatoes to the middle of pepper. Sprinkle a bit of oregano on tomatoes.

Step 4Add basil leaves.

Step 5Slice up fresh mozzarella. If yours has moisture in it, squeeze out the moisture with a paper towel.

Step 6Add cheese to top of your growing pepper tower.

Step 7Just for good measure, add more pepperoni on top.

Step 8Better yet, add more cheese on top of all that!

Step 9Bake uncovered for 35 minutes. Enjoy!
