A twist on regular jalapeno poppers; very easy. Tastes like a pizza in a jalapeno popper :)

Ingredients

  • 5 - jalapeno peppers
  • 8 ounces mozzarella cheese
  • 8 ounces pepperoni
  • 1 pint cherry tomatoes, diced
  • 1 tablespoon oregano, divided
  • 1 bunch fresh basil

How To Make caprese pepper poppers

  • Step 1
    Preheat oven to 375.
  • Step 2
    Slice peppers lengthwise and scoop out seeds and veins.
  • Step 3
    Slice pepperoni slices in half and line the along the sides of the peppers. Add diced tomatoes to the middle of pepper. Sprinkle a bit of oregano on tomatoes.
  • Step 4
    Add basil leaves.
  • Step 5
    Slice up fresh mozzarella. If yours has moisture in it, squeeze out the moisture with a paper towel.
  • Step 6
    Add cheese to top of your growing pepper tower.
  • Step 7
    Just for good measure, add more pepperoni on top.
  • Step 8
    Better yet, add more cheese on top of all that!
  • Step 9
    Bake uncovered for 35 minutes. Enjoy!
