can't beet it sandwich
This is my first vegetarian sandwich, a wonderful challenge! The best part was that I cut the sandwiches into fours and these bite-size veggie delights were a great success! Even those that were hesitant about "beets" loved it, it warmed my heart to have the skeptics on board. Enjoy!

Ingredients
- 2 slices multi grain bread loaf
- 1 slice freshly cooked beet
- 3 ounces greek yogurt, plain
- 2 tablespoons lemon juice
- 3 ounces feta cheese, crumbled
- 1 - baby cucumber, chopped
- 2 ounces smokehouse almonds, crushed
- dash kosher salt, black pepper, dill
How To Make can't beet it sandwich

Step 1Mix yogurt, 1 tbsp lemon juice, dash of salt & dill to spread on bread slices.

Step 2Slice beets about 1/4 inch thick and place on bread.

Step 3Mix feta, chopped baby cucumber, 1 tbsp. lemon juice, crushed almonds and dash pepper in a bowl, add mixture on top of beets. Close the sandwich and enjoy!
