Ingredients

  • 1 can pinto beans, drained
  • 1 can black beans, rinsed and drained
  • 1 can black eyed peas, drained
  • 1 package small package frozen corn
  • 1 jar 2 oz. jar sliced pimientos with juice
  • 1 - medium red onion, diced
  • 1 - green bell pepper, chopped
  • 1 cup chopped celery
  • FOR THE DRESSING
  • 1 cup sugar
  • 3/4 cup apple cider vinegar
  • 1/2 cup canola oil
  • 1 teaspoon water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make bean salsa

  • Step 1
    Combine all the dressing ingredients in a sauce pan and boil until clear.
  • Step 2
    Let the dressing cool a bit and pour over the bean mixture. Let sit overnight.
  • Step 3
    Serve with Tostito Scoops
