Ingredients

  • 1 can(s)
    pinto beans, drained
  • 1 can(s)
    black beans, rinsed and drained
  • 1 can(s)
    black eyed peas, drained
  • 1 pkg
    small package frozen corn
  • 1 jar(s)
    2 oz. jar sliced pimientos with juice
  • 1
    medium red onion, diced
  • 1
    green bell pepper, chopped
  • 1 c
    chopped celery
  • FOR THE DRESSING

  • 1 c
    sugar
  • 3/4 c
    apple cider vinegar
  • 1/2 c
    canola oil
  • 1 tsp
    water
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How to Make Bean Salsa

Step-by-Step

  1. Combine all the dressing ingredients in a sauce pan and boil until clear.
  2. Let the dressing cool a bit and pour over the bean mixture. Let sit overnight.
  3. Serve with Tostito Scoops
