  • 2 medium
    red onions
  • 1 large
  • 4-5 Tbsp
    olive oil, extra virgin
  • 1/2 pkg
    sliced mushrooms
  • 1 small
    head of cauliflower

  • Dashes
    dried oregano
  • Dashes
    minced garlic
  • Dashes
    red paprika
  • Dash
    cayenne pepper
  • Dashes
    cajun seasoning salt

How to Make Baked vegetables w/ cheesy mushrooms


  1. Preheat oven to 375 degrees
  2. Peel potatoes, and onions.
  3. Rinse mushrooms thoroughly.
  4. cut potato into cubes, place onto Ungreased baking pan.
  5. cube onions and set aside with mushrooms. these are added midway thru baking process.
  6. rinse and cut segments of cauliflower into large flowerets. Add to pan with potatoes.
  7. pile potatoes & cauliflower. Drizzle Olive oil, then sprinkle seasonings liberally.
  8. lift & toss with spatula coating well. Then place into hot oven. bake 25 minutes.
  9. Add onions & mushrooms. bake 20 minutes.
  10. Toss with spatula adding cheese on top of mushrooms return to garnish baking 10-15 minutes. Serve Hot!
