Yummy served warm, a great appetizer can also be served w/ a dip of Roasted humus.

Ingredients

  • 2 medium red onions
  • 1 large potato
  • 4-5 tablespoons olive oil, extra virgin
  • 1/2 package sliced mushrooms
  • 1 small head of cauliflower
  • SEASONINGS:
  • Dashes - dried oregano
  • Dashes - minced garlic
  • Dashes - red paprika
  • Dash - cayenne pepper
  • Dashes - cajun seasoning salt

How To Make baked vegetables w/ cheesy mushrooms

  • Step 1
    Preheat oven to 375 degrees
  • Step 2
    Peel potatoes, and onions.
  • Step 3
    Rinse mushrooms thoroughly.
  • Step 4
    cut potato into cubes, place onto Ungreased baking pan.
  • Step 5
    cube onions and set aside with mushrooms. these are added midway thru baking process.
  • Step 6
    rinse and cut segments of cauliflower into large flowerets. Add to pan with potatoes.
  • Step 7
    pile potatoes & cauliflower. Drizzle Olive oil, then sprinkle seasonings liberally.
  • Step 8
    lift & toss with spatula coating well. Then place into hot oven. bake 25 minutes.
  • Step 9
    Add onions & mushrooms. bake 20 minutes.
  • Step 10
    Toss with spatula adding cheese on top of mushrooms return to garnish baking 10-15 minutes. Serve Hot!
