Ingredients

  • 1 cup watermelon puree (blend watermelon and strain – reserving juice)
  • 1/2 cup fresh lime juice
  • 2 tablespoons minced parsley
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon premium vodka, optional
  • 1 tablespoon minced fresh chives
  • - kosher salt and freshly ground black pepper, to taste
  • 1 pound sushi grade fresh sea scallops
  • - rice crackers or crispy flatbreads, for serving

How To Make watermelon scallop ceviche

  • Step 1
    Mix together all of the ingredients except the scallops in a glass serving bowl.
  • Step 2
    Slice the scallops into 1/4-inch thick “coins” and drop into the dressing
  • Step 3
    Cover and refrigerate for 2 hours, then serve with rice crackers or crispy flatbread.
