Ingredients
- 1 cup watermelon puree (blend watermelon and strain – reserving juice)
- 1/2 cup fresh lime juice
- 2 tablespoons minced parsley
- 1 tablespoon fresh lemon juice
- 1 tablespoon premium vodka, optional
- 1 tablespoon minced fresh chives
- - kosher salt and freshly ground black pepper, to taste
- 1 pound sushi grade fresh sea scallops
- - rice crackers or crispy flatbreads, for serving
How To Make watermelon scallop ceviche

Step 1Mix together all of the ingredients except the scallops in a glass serving bowl.

Step 2Slice the scallops into 1/4-inch thick “coins” and drop into the dressing

Step 3Cover and refrigerate for 2 hours, then serve with rice crackers or crispy flatbread.
