shrimp and pineapple party dip

Chris Vanworth

this recipe is also good for stuffing jalapenos, and avocados!
my wife likes it as a dip with her baked pits chips!
i usually save a teaspoon of the pico, and shrimp and pineapple to top it with after it is mixed, just for presentation.
