This is great served over capellini pasta to make a meal for 4, or as an appetizer served with crusty bread, to sop up the white wine garlic sauce. Either way, you will love this & increase the recipe amount for a party!

Ingredients

  • 1 box spaghetti cooked al'dente
  • 1 cup white wine or chicken broth
  • 1 medium lemon - juiced
  • 2 tablespoons minced, fresh garlic (use more or less to your taste)
  • 1 pound medium shrimp, peeled & deveined
  • 8 tablespoons (1 stick) unsalted butter, cut into chunks
  • 1/4 cup chopped, fresh parsley (keep 2 tbs aside for garnish)
  • - salt & pepper to taste
  • - lemon wedges

How To Make jim's shrimp scampi

  • Step 1
    Heat a skillet and add the wine & garlic. Let the wine reduce by half. The garlic should be soft.
  • Step 2
    When the wine is reduced, add the shrimp and lemon juice. Stir until they are almost pink all the way through. Lower the heat.
  • Step 3
    Start whisking in the butter a piece at a time until it is all incorporated and the sauce has emulsified. Season with salt & pepper. Stir in parsley (remember to keep 2 Tbs. aside for garnish.)
  • Step 4
    Pour mixture over cooked pasta and mix together using tongs. Garnish with parsley. Place lemon wedges on the side.
