jim's shrimp scampi
This is great served over capellini pasta to make a meal for 4, or as an appetizer served with crusty bread, to sop up the white wine garlic sauce. Either way, you will love this & increase the recipe amount for a party!

Ingredients
- 1 box spaghetti cooked al'dente
- 1 cup white wine or chicken broth
- 1 medium lemon - juiced
- 2 tablespoons minced, fresh garlic (use more or less to your taste)
- 1 pound medium shrimp, peeled & deveined
- 8 tablespoons (1 stick) unsalted butter, cut into chunks
- 1/4 cup chopped, fresh parsley (keep 2 tbs aside for garnish)
- - salt & pepper to taste
- - lemon wedges
How To Make jim's shrimp scampi

Step 1Heat a skillet and add the wine & garlic. Let the wine reduce by half. The garlic should be soft.

Step 2When the wine is reduced, add the shrimp and lemon juice. Stir until they are almost pink all the way through. Lower the heat.

Step 3Start whisking in the butter a piece at a time until it is all incorporated and the sauce has emulsified. Season with salt & pepper. Stir in parsley (remember to keep 2 Tbs. aside for garnish.)

Step 4Pour mixture over cooked pasta and mix together using tongs. Garnish with parsley. Place lemon wedges on the side.
