Ingredients

  • 2 - sweet apples, peeled and coarsely grated
  • - juice of 1 lime, plus 1 1/2 tsp grated lime zest
  • 1 teaspoon white wine vinegar
  • 4 - matyas fillets herring
  • 1 cup fresh raspberries, plus more for garnish

How To Make herring with lime and raspberries

  • Step 1
    Mix the grated apple with the lime juice and vinegar in a small bowl. Place the herring fillets in a small dish, spread the mixture on top, and marinate 4 hours( if not consuming in 4 hours, refridgerate 12 hours then bring to room tempature before continuing) Remove the fillets and wipe off the marinade, reserving the marinade. place the fillets on a serving dish.
  • Step 2
    Pour the apple marinade into a blender, add the 1 cup raspberries and the lime zest and blend till smooth. Drizzle the mixture over the herring. garnish with raspberries and serve
