~ comforting au gratin shrimp cups ~ yum!

I just couldn't wait to try out the ramekins my daughter bought me for Christmas. I love them... nice for portion control too. This shrimp dish really hit the spot. Creamy good and just a hint of Sherry to the flavor. Can be served as an appetizer w/ toasted baguettes or serve over pasta as a main dish. It's impressive enough to serve guests. They will thank you!

Ingredients

  • 2 tablespoons each - butter & flour
  • 2/3 cup milk or a little more if too thick
  • 1/8 cup fresh grated - parmesan cheese + 3 tablespoons for topping
  • 2 tablespoons dry sherry
  • 1 cup medium cooked and deveined shrimp - tails removed
  • 1 1/2 tablespoons green onion - i mainly use the tops
  • pinch - cayenne pepper
  • kosher - salt to taste - i used about 1 tsp
  • butter - for ramekins

How To Make ~ comforting au gratin shrimp cups ~ yum!

  • Step 1
    Preheat oven to 350 degree F. In a small saucepan, over medium heat - melt butter. Whisk in the flour and stir well to combine, continue cooking for a little over a minute, making sure not to burn.
  • Step 2
    Add milk and stir until thickened.
  • Step 3
    Remove from heat and add the green onion, salt, shrimp, cayenne, Sherry and Parmesan. Stir well. Butter ramekins and spoon equal portions into each. Sprinkle with about 1 tablespoon of Parmesan for each. Next 1 tablespoon bread crumbs for each and a sprinkle of paprika.
  • Step 4
    Bake for 15 minutes or until starting to bubble and begin to brown.
  • Step 5
    Remove from oven and eat as is, or serve with a salad or over pasta. This would also be great served on garlic toasted baguettes. We love it!
