Ingredients

  • 4 - avocados, halved and pitted
  • 1/8 cup olive oil, extra virgin
  • 1/2 - yellow onion, 1/2" slices
  • 4 cloves garlic, peeled
  • 1 - jalapeno, halved and seeded
  • 1 - lemon, halved
  • 1 1/2 teaspoons sea slat
  • 1 teaspoon black pepper
  • 1 bunch cilantro, chopped

How To Make grilled guacamole

  • Step 1
    Brush avocados with 1 tablespoon oil.
  • Step 2
    Grill, meat side down, on grill for 2-3 minutes.
  • Step 3
    Drizzle with remaining olive oil and gently toss.
  • Step 4
    Grill vegetables and lemon until onions are translucent, about 5 minutes.
  • Step 5
    Remove flesh from avocados with spoon.
  • Step 6
    In a bowl, mash the avocado meat with fork, leaving it relatively chunky.
  • Step 7
    Add juice from the grilled lemon and season with salt and pepper.
  • Step 8
    Meanwhile, roughly chop the rest of the grilled vegetables and fold into the avocado mixture.
  • Step 9
    Add more salt to taste, if needed. Finish with cilantro.
