Ingredients

  • 4
    avocados, halved and pitted
  • 1/8 c
    olive oil, extra virgin
  • 1/2
    yellow onion, 1/2" slices
  • 4 clove
    garlic, peeled
  • 1
    jalapeno, halved and seeded
  • 1
    lemon, halved
  • 1 1/2 tsp
    sea slat
  • 1 tsp
    black pepper
  • 1 bunch
    cilantro, chopped

How to Make Grilled Guacamole

Step-by-Step

  1. Brush avocados with 1 tablespoon oil.
  2. Grill, meat side down, on grill for 2-3 minutes.
  3. Drizzle with remaining olive oil and gently toss.
  4. Grill vegetables and lemon until onions are translucent, about 5 minutes.
  5. Remove flesh from avocados with spoon.
  6. In a bowl, mash the avocado meat with fork, leaving it relatively chunky.
  7. Add juice from the grilled lemon and season with salt and pepper.
  8. Meanwhile, roughly chop the rest of the grilled vegetables and fold into the avocado mixture.
  9. Add more salt to taste, if needed. Finish with cilantro.
