I love making meatballs as an appetizer for parties. I made several different types, and I decided I needed a spicy meatball. This is what I came up with.

Buffalo chicken meatballs are a delicious and easy way to enjoy the spicy and tangy flavor of Buffalo wings without the mess. Filled with fresh green onion and parsley flavor, the chicken meatballs are tender and moist. Lots of garlic adds a savory depth of flavor. Rich and buttery, the wing sauce has a kick and adds vibrant color to the appetizer. Once the chicken meatballs are baked, they're covered in the zesty sauce. They're great for parties, game nights, or as a family meal. Make sure to serve with ranch or blue cheese dressing for dipping.

Ingredients

  • MEATBALLS
  • 2 pounds ground chicken
  • 4 tablespoons olive oil
  • 6 cloves garlic, crushed and minced
  • 1/2 cup chopped parsley
  • 1/2 cup green onions, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • WING SAUCE
  • 6 tablespoons butter
  • 1 cup Frank's Red Hot sauce (or favorite)
  • 1 teaspoon pepper
  • GARNISH
  • - chopped greens from the green onions

How To Make buffalo chicken meatballs

  • Saute onions, parsley, salt, pepper, and garlic.
    Step 1
    Heat oil on medium heat. Saute onions, parsley, salt, and pepper for about five minutes. Add garlic and saute for another minute or so being careful not to burn the garlic. Remove from heat and let cool.
  • Mix ground chicken with onion mixture.
    Step 2
    Using your hands, mix ground chicken with onion mixture. Place in the fridge for about 20 minutes. Preheat oven to 400 degrees.
  • Roll meatballs and bake.
    Step 3
    Roll into 1-inch meatballs and place on a greased cookie sheet. Bake in preheated oven for 15-20 minutes or until meatballs are golden brown.
  • Heat butter, hot sauce, and black pepper in a saucepan.
    Step 4
    While the meatballs are baking, make the wing sauce. Stirring frequently, heat butter, hot sauce, and black pepper in a saucepan over medium heat until it reaches a soft boil.
  • Toss baked meatballs with hot sauce in a bowl.
    Step 5
    Remove from heat. Toss baked meatballs with hot sauce in a bowl or keep them warm in a Crock Pot. Garnish with chopped tops of green onion.
  • Green onions sprinkled over Buffalo Chicken Meatballs.

    Serve with ranch or blue cheese dressing and, if desired, celery and carrots.
