grilled fruit skewers with blueberry glaze

We are trying to cut down on the starches we eat, and just eat healthier in general. My daughter thought of these and my husband came up with the glaze. Delicious!

Ingredients

  • 2-3 - apples
  • 2-3 - bosc pears
  • - (or fresh fruit of your choosing)
  • 1/4 cup fresh blueberries
  • 1-2 tablespoon balsamic vinegar (or use blackberry brandy)
  • 1 teaspoon corn starch

How To Make grilled fruit skewers with blueberry glaze

  • Step 1
    Cut the fruit into large chunks, to fit on a skewer. Alternate fruit pieces on the skewer.
  • Step 2
    Meanwhile, in a small saucepan, cook blueberries & balsamic over very low heat. As the blueberries cook, use a small whisk to break up most of the berries to release more juice.
  • Step 3
    After it cooks down a bit, sprinkle in the corn starch to thicken it enough to cling to the fruit a bit while grilling.
  • Step 4
    Grill until fruit is soft & slightly browned, turning often.
