As I look out the windows, I see rain mixed with sleet falling out of cold gray skies. Time to get into a nice warm kitchen and make something wholesome and comforting… Like Cheddar Waffles. These are not your basic sweet variety of waffles… the kind that you lavish with syrup, jam, and butter. These are best suited for the more savory variety of meal. My best way to use these is with something like creamed chicken… Chicken ala King style. Or with other savory dishes. So, you ready… Let’s get into the kitchen.

Ingredients

  • 2 cups flour, all-purpose variety, 8 ounces
  • 2 teaspoons baking powder
  • 2 teaspoons salt, kosher variety
  • 2 large eggs, at room temperature
  • 2 cups milk, whole fat
  • 8 tablespoons sweet butter, unsalted
  • 5 ounces cheddar cheese, shredded, about 2 cups

How To Make wholesome cheddar waffles

  • Step 1
    Gather your ingredients.
  • Step 2
    Take the butter, and melt in a small pan over low heat.
  • Step 3
    Take the dry ingredients (flour, baking powder, and salt), and whisk together in a bowl.
  • Step 4
    In a second bowl, whisk the eggs until smooth.
  • Step 5
    Add the milk, and whisk to combine.
  • Step 6
    Slowly add the melted butter, and whisk while adding.
  • Step 7
    Chef's Note: Remove the whisk and replace with a rubber spatula, or some other mixing implement.

    Chef’s Tip: You don’t want to use a whisk in the following steps because it would just get clogged up with the cheese, and other ingredients.

    Add the cheese and then mix until thoroughly combined.
  • Step 10
    Add the dry ingredients to the bowl, and stir until the ingredients are incorporated.

    Heat up the waffle iron to medium heat.
  • Step 12
    Chef’s Note: Depending on the instructions for your waffle iron, you might need to coat the plate with some oil or butter.

    Add the batter, about 1/2 cup
  • Step 14
    Close the lid and cook.
  • Step 15
    Remove when the waffle is nice and toasty, about 3 to 5 minutes.

    Serve with creamed chicken or with a nice sunny-side egg on top, and a side of bacon. Enjoy.
