One of my favorite appetizers. A twist on the traditional cheddar welsh rarebit. I love welsh rarebit and I love blue cheese; the tart apple makes for a delectable trio.

Ingredients For tart apple and blue cheese welsh rarebit bites

  • 1/2
    baguette, cut into 1/2'' slices
  • 3 Tbsp
    unsalted butter, melted
  • 1 sm
    tart apple, such as granny smith, peeled, cored, halved, and thinly sliced
  • 8 oz
    blue cheese, crumbled and @ room temperature
  • 3 Tbsp
    creme fraiche (substitutions: crema mexicana or mix of 1/2 sour cream and 1/2 whipping cream
  • 1 tsp
    worcestershire sauce
  • 1 tsp
    dijon mustard
  • 1 tsp
    honey
  • sea salt and freshly ground pepper, add to taste

How To Make tart apple and blue cheese welsh rarebit bites

    Heat a grill pan over medium high heat. Brush baguette slices with melted butter. Working in batches, grill baguettes about 2 minutes. Flip once, until golden brown on both sides. Transfer to parchment paper lined baking sheet. Layer 2 apple slices on each baguette bite.

    Arrange an oven rack to 4" from broiler and heat broiler to high. Mix cheese, crème fraiche, Worcestershire, Dijon, honey, salt and pepper, in a small bowl.

    Spread about 1 tbsp. of the cheese mixture over each toast bite. Broil until topping is melted and golden brown, about 4 minutes.
