pimento cheese
I'm not sure WHEN Velveeta was first invented, but I'm pretty sure this recipe has been in my family ever since. Mom made this for every camping/fishing trip that our family ever took, and I did the same with my own family. So much so that my kids called it "minner cheese!" (As we often fished with minnows for bait.) Lots of good memories go along with this recipe!

Ingredients
- 16 ounces american processed cheese loaf (velveeta), shredded
- 1 jar (small 2 oz.) diced pimentos, drained
- 1/2 cup miracle whip salad dressing
- 2 teaspoons sweet pickle juice (or more, to taste)
