A quick method to make an old standby. This is for stove top pressure cooker. If you have an electric cooker, follow your manufacturers instructions.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, cored, seeded and diced
  • 2 cups uncooked long-grain white rice
  • 3 cups tomato sauce
  • 2 cups water
  • 2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 - chipotle pepper (canned in adobo sauce. add some of the sauce if desired)

How To Make pressure cooker spanish rice

  • Step 1
    Heat oil in the pressure cooker over medium-high heat. Add onion, garlic and green pepper. Cook until the onion is soft. Add the rice and cook 1 minute.
  • Step 2
    Add remaining ingredients; cover and lock the lid. Bring to high pressure over high heat. Lower heat to stabilize the pressure. Cook for 7 minutes.
  • Step 3
    Remove from heat and let pressure drop using the quick-release method.
  • Step 4
    Unlock lid and stir rice before serving.
