A quick method to make an old standby. This is for stove top pressure cooker. If you have an electric cooker, follow your manufacturers instructions.

Ingredients For pressure cooker spanish rice

  • 2 Tbsp
    olive oil
  • 1 md
    yellow onion, peeled and chopped
  • 2 clove
    garlic, minced
  • 1 md
    green bell pepper, cored, seeded and diced
  • 2 c
    uncooked long-grain white rice
  • 3 c
    tomato sauce
  • 2 c
    water
  • 2 tsp
    salt
  • 1/4 tsp
    ground black pepper
  • 1
    chipotle pepper (canned in adobo sauce. add some of the sauce if desired)

How To Make pressure cooker spanish rice

  • 1
    Heat oil in the pressure cooker over medium-high heat. Add onion, garlic and green pepper. Cook until the onion is soft. Add the rice and cook 1 minute.

    Add remaining ingredients; cover and lock the lid. Bring to high pressure over high heat. Lower heat to stabilize the pressure. Cook for 7 minutes.

    Remove from heat and let pressure drop using the quick-release method.
  • 4
    Unlock lid and stir rice before serving.
