Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, peeled and chopped
- 2 cloves garlic, minced
- 1 medium green bell pepper, cored, seeded and diced
- 2 cups uncooked long-grain white rice
- 3 cups tomato sauce
- 2 cups water
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1 - chipotle pepper (canned in adobo sauce. add some of the sauce if desired)
How To Make pressure cooker spanish rice

Step 1Heat oil in the pressure cooker over medium-high heat. Add onion, garlic and green pepper. Cook until the onion is soft. Add the rice and cook 1 minute.

Step 2Add remaining ingredients; cover and lock the lid. Bring to high pressure over high heat. Lower heat to stabilize the pressure. Cook for 7 minutes.

Step 3Remove from heat and let pressure drop using the quick-release method.

Step 4Unlock lid and stir rice before serving.
