pears poached in wine (pressure cooker)
This is for a stovetop cooker, such as Fagor. For a variation, drizzle with chocolate sauce before serving. Garnish with fresh mint leaves.

Ingredients
- 4 large semi-ripe bosc pears
- 750 milliliters fruity red wine (merlot)
- 1 cup granulated sugar
- 1 stick cinnamon (about 4-inches)
- 1 - whole clove
- - zest and juice of 1 orange
- 2 tablespoons granulated sugar
- 1/2 cup mascarpone cheese
How To Make pears poached in wine (pressure cooker)

Step 1Peel and core the pears. Leave them whole with the stem intact.

Step 2Add the pears, wine, 1 cup of sugar, cinnamon stick, clove, orange zest and juice. Close and lock lid. Bring to pressure on high heat, lower to medium heat and cook for 3 minutes at high pressure.

Step 3Release pressure using natural release method.

Step 4Uncover, gently remove the pears and allow them to cool on a flat dish.

Step 5Reduce wine on high heat by half.

Step 6Mix the mascarpone gently with the remaining 2 tablespoons of sugar.

Step 7Place each pear on a serving plate and serve a spoonful of the cheese next to each pear and drizzle with remaining sauce.
