This is for a stovetop cooker, such as Fagor. For a variation, drizzle with chocolate sauce before serving. Garnish with fresh mint leaves.

Ingredients

  • 4 large semi-ripe bosc pears
  • 750 milliliters fruity red wine (merlot)
  • 1 cup granulated sugar
  • 1 stick cinnamon (about 4-inches)
  • 1 - whole clove
  • - zest and juice of 1 orange
  • 2 tablespoons granulated sugar
  • 1/2 cup mascarpone cheese

How To Make pears poached in wine (pressure cooker)

  • Step 1
    Peel and core the pears. Leave them whole with the stem intact.
  • Step 2
    Add the pears, wine, 1 cup of sugar, cinnamon stick, clove, orange zest and juice. Close and lock lid. Bring to pressure on high heat, lower to medium heat and cook for 3 minutes at high pressure.
  • Step 3
    Release pressure using natural release method.
  • Step 4
    Uncover, gently remove the pears and allow them to cool on a flat dish.
  • Step 5
    Reduce wine on high heat by half.
  • Step 6
    Mix the mascarpone gently with the remaining 2 tablespoons of sugar.
  • Step 7
    Place each pear on a serving plate and serve a spoonful of the cheese next to each pear and drizzle with remaining sauce.
