This is a basic recipe for cooked barley. Use the barley in soups, stews, salads, etc. If you want it as a side dish, add any spices or herbs you desired, and sub broth for the water. This is for stove top pressure cooker. If you have an electric cooker, follow your manufacturers instructions. Yields 4 cups. NOTE: Do not leave out the oil. It keeps the barley from bubbling too much and clogging the steam vent. This is a good hint for cooking beans, also.

Ingredients

  • 1 cup dry pearl barley, rinsed and drained
  • 4 1/2 cups water
  • 1 tablespoon vegetable oil

How To Make pressure cooker pearl barley

  • Step 1
    Combine all ingredients in pressure cooker.
  • Step 2
    Cover and lock lid. Bring to pressure over high heat. Lower heat to stabilize pressure.
  • Step 3
    Cook for 15 minutes.
  • Step 4
    Remove from heat and let pressure drop using quick-release method.
  • Step 5
    Unlock and remove lid. The barley should be slightly chewy. If it is too hard, bring up to a simmer and cook until done, stirring.
  • Step 6
    Drain in a colander and use in your recipes.
