Ingredients

  • 1-1/4 c
    sliced zucchini
  • 1/2 c
    sliced carrots
  • 1/2 c
    sliced onion
  • 1 small
    red bell pepper, cut into strips
  • 2-1/2 c
    shredded green cabbage
  • 1 Tbsp
    peanut oil
  • 12 oz
    boneless, skinless chicken breasts, cut into 1" pieces.
  • 1/2 c
    bottled stir-fry sauce
  • 1/2 tsp
    ground ginger
  • 3 c
    hot cooked rice
  • 3/4 c
    chopped peanuts

How to Make Ginger-chicken stir-fry

Step-by-Step

  1. In lg skillet or wok, cook, and stir-fry zucchini, carrots, onion and cabbage in oil over med-high heat for 2 mins.
  2. remove veggies from pan. repeat w/ remaining veggies. Remove veggies from pan. Add chicken to pan. Cook, stirring, for 5 mins. Add stir-fry sauce and ginger. Cook, stirring until bubbly. Return veggies to pan.
  3. Cook, stirring for 1 min. Serve veggies and chicken over rice. Sprinkle w/ chopped peanuts.
