This also is a recipe I got from my dad. He was an excellent cook. In fact he was a chef in the Navy, so a lot of my recipes come from him.
I may tweak them from time to time, but they stay true to the original recipe as much as possible.

Ingredients

  • 2/3 c
    apricot preserves, preferably low sugar or sugar free
  • 3 Tbsp
    light teriyaki sauce
  • 2 Tbsp
    dijon mustard
  • 1 tsp
    ground ginger
  • 1 Tbsp
    canola oil
  • 4
    boneless loin pork chops
  • 1/8 tsp
    salt & pepper.
  • 1/2 lb
    fresh snow peas
  • 1/2 lb
    uncooked angel hair pasta
  • 2
    scallions, sliced diagonally.
  • 1 Tbsp
    toasted sesame seeds.

How to Make Apricot pork w/ snow peas.

Step-by-Step

  1. In bowl, stir together preserves, teriyaki sauce, mustard and ginger. Heat oil in lg skillet over med-high heat. Season chops w/ salt & pepper. Add chops to skillet and cook until browned and no longer pink inside. Cook pasta as directed, adding snow peas the last 5 min of cooking, drain. Place pasta and snow peas in lg serving bowl. Set aside 1/4 cup apricot sauce. Toss remaining apricot sauce w/ pasta mix. Garnish w/ scallions & sesame seeds. Serve w/ extra apricot sauce.
