I found this to be a very good SF cake and freezes very well. Your friends won't know its SF. Look for my SF icing also to go on this cake.

Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon, ground
  • 1/2 cup chop nuts
  • 3/4 cup oil
  • 3/4 cup honey
  • 4 - eggs
  • 2 cups carrot, shredded
  • 1 cup pineapple, crushed drained

How To Make diabetic carrot cake

  • Step 1
    Mix dry items well. Add oil,honey and eggs. Mix well stir in remaining items.Pour in to a bundt pan and bake at 350* for about 45 mins. depending on oven. Cool for about 10 mins. then turn out and let finish cooling.
  • Step 2
    Look for my sugar free icing for this cake.
