Banana Applesauce Muffins

I made these into mini muffins and baked them a little less. They stuck to my papers so next time I will try spraying the pan instead. I was looking for a banana/apple recipe and this one is really good. The banana flavor is great. It comes from the AMA Family Health Cookbook. The picture I took was better than this...guess I need help uploading pics for my recipes.

  • 2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1 tsp
  • 1/2 tsp
  • 1 1/2 c
    bananas about 4
  • 1
  • 4 Tbsp
  • 2/3 c
    brown sugar, firmly packed
  • 1/2 c
    applesauce, unsweetened
  • 1 tsp
    vanilla extract

How to Make Banana Applesauce Muffins


  1. In a bowl combine flour, baking powder, baking soda, salt and cinnamon. Mix together.
  2. In a separate bowl combine bananas and egg, mix til smooth; add oil, brown sugar, applesauce and vanilla. Mix thoroughly.
  3. Add banana mixture to flour mixture. Mix together, do not over mix. fill muffin pans and bake 375 degree for 22-25 minutes.
