This soup is my favorite way of making onion soup. I can't imagine why restaurants charge so much for it when there are so few ingredients, and it is so simple to put together.

It speeds up the cooking process without sacrificing any flavor. The onion soup has a rich beefy broth with a silky texture and is filled with caramelized onions. Under melted cheese, is a slice of bread that soaks up the oniony broth.

Ingredients For not so french onion soup

  • 6 lg
  • 3 Tbsp
  • 3 Tbsp
    vegetable oil
  • 64 oz
    containers beef broth (2 - 32 oz containers)
  • 2 tsp
    beef base
  • 1/8 tsp
    crushed red pepper
  • 1/2 - 1 tsp
    black pepper
  • 1 tsp
    dried parsley
  • 1 tsp
    Worcestershire sauce
  • 1 lg
    bay leaf
  • 2 slice
    Swiss cheese per bowl of soup
  • 1 slice
    toast per bowl of soup

How To Make not so french onion soup

  • Sliced onions on a cutting board.
    Peel and slice onions 1/4 inch thick, then half them, making a half moon shape.
  • Caramelizing onions in butter.
    Saute the onions in the butter and oil until caramelized, stirring occasionally. My stove top takes about 25 minutes.
  • Beef stock, beef base, and seasonings added to onions.
    Add beef stock, beef base, and seasonings.
  • Onion soup simmering.
    Simmer 20 minutes.
  • Prepping oven to toast bread.
    Set broiler to high; set rack 6 inches from heat source. Cut bread to fit your soup crock and toast.
  • Ladling soup into a crock.
    Ladle soup into an oven-safe crock.
  • Toasted bread on top of the soup.
    Top with toast.
  • Swiss cheese on top of the toasted bread.
    Then add 2 slices of Swiss cheese.
  • Broiling until the cheese melts.
    Broil until cheese is melted and starting to brown.
