    olive oil, extra virgin

    onion, sweet or yellow
  • 1
    celery stalk, chopped
  • 1 Tbsp
    garlic
  • 1
    parsnips
  • 1
    sweet potatoes
  • 14 oz
    white beans
  • 1 can
    tomatoes, canned and cut up
  • 1
    zucchini
  • 1
    yellow squash, fresh
  • 32 oz
    vegetable stock
  • 1 tsp
    basil, dried
  • 1 pinch
    ginger
  • 1 pinch
    sage
  • 1 pinch
    thyme
  • 28 oz
    water
  • pinch
    sea salt to taste
  • ground pepper to taste

How To Make hearty vegetable soup

  • 1
    Heat olive oil, add onion and cook until transparent in dutch oven. Add celery, zucchini, squash, seasonings. Dice root vegetables while steaming. Add remaining ingredients, bring to boil, then lower heat and cover. Cook for 20-30 min. Add fresh Parmesan sprinkles on top to cup or bowl and side with crusty bread! Enjoy!
