Ingredients

  • PRE HEAT OVEN TO 350...GREASE A 13

  • 2 1/2 lb
    spinach
  • 2 c
    chopped onion
  • 1 Tbsp
    chopped garlic
  • 1 Tbsp
    + 2 teaspoon italian seasonig
  • 2 1/2 tsp
    salt
  • 1 1/4 tsp
    pepper
  • 3 can(s)
    quartered artichoke hearts(8 1/2 oz each)
  • 2 large
    eggs
  • 1 1/2 c
    heavy cream
  • 2 c
    chicken stock
  • 2 Tbsp
    lemon juice
  • 12-14 c
    day old french bread
  • 1 lb
    brie..rind removed and cut into cubes
  • 1/2 c
    parmesan

How to Make Lisa's Spinach and Artichoke Dressing

Step-by-Step

  1. Bring a medium pot of water to a boil.
    Add spinach and cook until wilted,about 30 seconds.
    Drain and rinse with cold water.
    Squeeze as much water as possible and roughly chop spinach.
  2. Cook onions in 1 T. olive oil in a skillet over medium heat.
    Add garlic,2 Teaspoons Italian seasoning,1/2 teaspoon salt,and 1/4 teaspoon pepper.
    Cook until garlic is fragrant.
    Add the artichokes and cook,keep stirring about 2 minutes and reserve.
  3. Combine eggs,cream,chicken stock,1 Tablespoon Italian seasoning,remaining salt and pepper in a large bowl.Whisk.
  4. Add bread,spinach,artichoke mixture,Brie,1/4 cup Parmesan and stir.
    Rest until all liquid is absorbed.
  5. Pour bread pudding mixture into dish.
    Sprinkle remaining Parmesan over the top and drizzle with olive oil.
  6. Bake until firm in center center of oven,about 1 hour.
