I finally found the cinnamon chips at Winco here in California that all the JAP gals were talking about. I wanted to figure out a good recipe to use them in. I had a lot of apples and thought an apple oatmeal cookie would be a good way to use them. They turned out awesome, and everyone loved them in their Christmas goodie boxes. The local JAP gals who came to the cookie exchange thought they were yumolicious. Enjoy!

Oh my goodness ... this recipe is all the flavors of fall in a cookie. The spices and the cinnamon chips give this cookie a burst of cinnamon flavor. Walnuts add crunch, and you taste the apple bits. This recipe takes oatmeal cookies to a brand new level of deliciousness. These would be great for a bake sale, cookie exchange or just a yummy treat for the family.
