My dad would make this salad and bring it to get-togethers. It is so delicious and I could eat it for my whole meal! It is ALWAYS a hit!!

Ingredients

  • 2
    bags of baby spinach
  • 1 c
    mozzarella cheese
  • 1 can(s)
    mandarin oranges, drained
  • 1/2 c
    almonds, slivered
  • 4 Tbsp
    sugar
  • 1 jar(s)
    poppy seed dressing (i like marzetti's the best!)

How to Make Easy Spinach Salad

Step-by-Step

  1. Rinse the baby spinach and put in a bowl. Add the mozzarella cheese & drained oranges. Toss together.
  2. Caramelize almonds: Put 4 tablespoons sugar in heavy skillet. Add almonds. Stir constantly over low heat until sugar melts, turns brown and collects on almonds. Remove from heat and break apart to cool. USE A WOODEN SPOON--others melt!
  3. Dress the salad with the poppy seed dressing to your liking; or you can keep it on the side if you prefer. I find I like it better when all the flavors have blended and the dressing isn't just on top.
  4. Top with caramelized almonds. Serve immediately.
