This fruit salad is a vintage recipe from the 1960s that's an oldie but a goodie. Using sugar-free products makes for a lighter, less guilt, refreshing salad. It has a fluffy texture with sweet chunks of fruit. The cottage cheese is barely noticeable, but it does add a slight savoriness to the salad. Great for summer BBQs. Ours was chilled perfectly at about 4-5 hours.

Ingredients For jell-o fat-free fruit salad

  • 1 box
    sugar-free strawberry banana Jell-O (.6 oz)
  • 1 pkg
    sugar-free Cool Whip (8 oz)
  • 1 can
    pineapple tidbits, drained (20 oz)
  • 1 can
    fruit cocktail, drained (15 oz)
  • 1 pkg
    fat-free small curd cottage cheese (24 oz)

We could not find sugar-free strawberry banana gelatin. We substituted it with sugar-free strawberry gelatin.
  • Gelatin and water in a bowl.

    First gather up your extra large, non-plastic bowl. Heat in microwave to boil 2 cups of water in a glass measuring cup. Pour water into the large bowl. Then add the Jell-O. Whip and beat for 2 minutes.
  • Pouring ice cubes into the bowl.

    Next, use the cold water method by adding ice cubes to the measuring cup and then add cold water until you have 2 cups. Pour in cold water with the Ice. Beat and whip for 2 minutes until all the ice has melted.
  • Drained pineapple and fruit cocktail in a bowl.

    Drain your pineapple and your fruit cocktail in a strainer. When drained, bang the strainer on the sink to make sure all is drained.
  • Fruit added to the Jell-O.

    Add the drained fruit to the Jell-O.
  • Drained cottage cheese added to the Jell-O.

    Drain the cottage cheese. When drained well, again beat the strainer on the sink to make sure all is drained. Mix the cottage cheese until all is well mixed.
  • Folding in the whipped topping.

    Fold in the Cool Whip until everything is mixed well.
  • Gelatin bowl covered with plastic wrap to set up.

    Cover and chill. You now have a frothy top with layers resting halfway down to the bottom. If you make this in the early morning, it will be ready to eat at dinner. After about the 3rd serving there will be what appears to be water lingering a bit in the bottom. This is normal and will not affect the taste. Do not try to pour it off as you could pour everything away. Enjoy!
