I think this is one of the better recipes I've tried & liked enough to give out to other people. I hope you will like it also.

Ingredients For stuffed acorn squash

  • 1-2 md
    acorn squash
  • 2 Tbsp
    margarine
  • 2 Tbsp
    onions, chopped
  • 1/2 c
    broccoli, chopped
  • 1/4 c
    mushrooms, chopped
  • 2 Tbsp
    celery stalk, chopped
  • 2 Tbsp
    walnuts, chopped
  • 1/2 tsp
    brown sugar, firmly packed
  • 1/2 tsp
    soy sauce
  • 2-4 slice
    munster cheese
  • 1 Tbsp
    fresh basil, chopped

How To Make stuffed acorn squash

    Heat oven to 375 to 400 degrees, Cut squash in half and remove seeds. Rub cut flesh with salt and place flesh side down in baking dish. Bake for about 35 minutes. Meanwhile saute onion in marg until clear. Add Broccoli, mushrooms and celery. Saute about 4 minutes.

    Stir in walnuts and basil. Then sprinkle with brown sugar and soy sauce. Toss to mix well. Check squash with fork to see if it goes through flesh. Stuff with veggie mixture. Top with 1 slice of munster chesse & return to oven for about 5 minutes.
