I hate breakfast cereal so I love anything that lets me start the day without it. These are a great substitute. Just don't let your family eat too many at one time. They do have a lot of fiber in them.

Ingredients For bran-oat-raisin cookies

1 craisins

3/4 cboiling water

3/4 cwhite sugar

1/4 chigh fiber drink mix

1/2 cpacked brown sugar

1egg
-
1 Tbspmilled flax seed + 3 tblsp. water (if you don't have this add another egg)

1/2 tspsalt
-
1 tspbaking soda
-
1 tspcinnamon
-
1/4 tspgrated nutmeg

1 tspvanilla
-
2 cunbleached white flour
-
1 1/2 coatmeal, uncooked

2 cbran flakes
-
3/4 cshortening, butter flavor
How To Make bran-oat-raisin cookies

1Once the water is boiling remove from heat and gently add the raisins. Stir gently to break up the raisins. Let them sit while to plump up.

2In a large mixing bowl mix the sugars together with eggs, shortening and milled flax seed and water until light and fluffy. Drain the raisins into a strainer and let drip while you mix the dry ingredients. Scrap down the sides of the bowl as you go.

3Next blend in the cinnamon, nutmeg, salt, baking powder and vanilla. Beat together until smooth. Add flour a 1/4 cup at a time. Blend well before adding more.

4Add the raisins and mix well. Add the oatmeal a little at a time. Then add the bran flake cereal a little at a time. Refrigerate for 30 minutes before baking.

5Preheat oven to 350' You must bake on a well greased cookie sheet or parchment paper. I use a 1 ounce ice cream scoop or you can drop by the spoon. Make 2 to 3 dozen cookies depending on the size of cookie.
