zucchini oatmeal muffins

Ok, summer is here and we need to use our fresh veggies we grow in our gardens, soo this zucchini muffin recipe will help to use some of them. Also I have zucchini sandwich recipe posted !

Ingredients For zucchini oatmeal muffins

  • 2 1/2 c
    all purpose flour
  • 10 oz
    shredded zuchini
  • 3/4 c
    oil
  • 1 Tbsp
    baking powder
  • 1 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 c
    nuts
  • 1/2 c
    sugar
  • 1/2 c
    quick cooking oats
  • 4
    eggs

How To Make zucchini oatmeal muffins

    Bake in 400 degree oven for 25 minutes.

    In a large bowl/ beat eggs with fork/ stir in zucchini and oil / stir in rest of ingredients. Just stir DO NOT over mix.
