Recipe from " Foods that made New England Famous" posted by Mrs. L.W. Crossman, No Weymouth, MA ~ she wrote " In northern Maine, where this recipe originated, the huge black iron range glowed all day. When the family gathered for the Saturday night meal the aroma of baked beans and steamed brown bread met their approval. The family and hired man sat down to this meal. They certainly appreciated such a hearty repast.

Ingredients For mrs. tainter's brown bread

  • 1 1/2 c
    baking soda
  • 1 c
    sour milk
  • 2 c
    corn meal
  • 1 c
    sifted white flour
  • 1 c
    sifted rye flour (or whole wheat)
  • 1 c
    sweet milk
  • raisins if desired

How To Make mrs. tainter's brown bread

    Butter well a brown bread mold. Dissolve soda in sour milk.

    Mix and sift corn meal, white flour, rye flour and salt into bowl.

    Add sweet and sour milk. Mix well. Stir in molasses. Batter will be thin. Pour into mold and cover. Steam slowly. Requires about 2 hours.

    Serve hot with baked beans or peas. Good cold with cottage cheese for luncheon. Very good toasted too!
