This is my first vegetarian sandwich, a wonderful challenge! The best part was that I cut the sandwiches into fours and these bite-size veggie delights were a great success! Even those that were hesitant about "beets" loved it, it warmed my heart to have the skeptics on board. Enjoy!

Ingredients For can't beet it sandwich

2 slicemulti grain bread loaf

1 slicefreshly cooked beet

3 ozgreek yogurt, plain

2 Tbsplemon juice

3 ozfeta cheese, crumbled

1baby cucumber, chopped
-
2 ozsmokehouse almonds, crushed

dashkosher salt, black pepper, dill
How To Make can't beet it sandwich

1Mix yogurt, 1 tbsp lemon juice, dash of salt & dill to spread on bread slices.

2Slice beets about 1/4 inch thick and place on bread.

3Mix feta, chopped baby cucumber, 1 tbsp. lemon juice, crushed almonds and dash pepper in a bowl, add mixture on top of beets. Close the sandwich and enjoy!
