Oh shoot Cassie, forgot to mention, put a couple holes in all crust before putting in oven to pre-cook...sorry about that. Was dosing off and it came to mind...smiles
Thank you so much for those wonderful tips, Mary! I will do that the next time I make this. Its a given on my husbands birthday...this is all he ever asks for. I've heard of the triple crust as well, but have yet to try it.

Thanks Cassie for sharing, this is just like my mama's.(she is in heaven now) she left this for me...I am the only one who has it...she made triple crust. Try this, you may also like this hint. (if you do not already know about this)...She always said this was her secret...smiles
Once crust is cold and you have placed it in the dish...pre-cook bottom crust just to you see it turning pale...(Mama always used God's number #7, which as you know means finished or complete for about 7 minutes) place first layer prepared peaches, put on second crust, place back in oven until turning pale, again about 7 minutes, place remaining prepared peaches, place top crust, bake until desired brownness on top crust...This keep the bottom and middle crust from becoming too soggy.
I do this when makings my all time favorite "Sweet potatoes pies" One crust is in pie pan or glass dish I just pop the crust in the oven for about 7-9 minutes, place prepared sweet potatoes mixture on top of crust. (if you notice pie crust is browning before pie is done cover (as you already know) with pie protector. This method may cause the rim to brown sooner, just protect it....awesome!!!!
