My family and I loved this dish! I had originally planned to make a time consuming Etouffee, but ran out of ambition, lol. I only did a couple of minor changes...I had some leftover red bell pepper to use up, so there wasn't a whole lot in mine and I added a little more coconut milk because I wanted it to be saucy. I also used long grain rice because it's what I had on hand. It was SO delicious! This recipe is easy to make and can be whipped up in no time with many staple ingredients. I added a photo above.
