I LOVE quinoa!! Sooo healthy! I made this for lunch at the firehouse...YES I said the firehouse. The guys had never even heard of quinoa and wanted to know what I was making with that "birdseed"... They went crazy over this recipe! I added some garden-fresh tomato slices to the top(after it baked) and THEN sprinkled the parmesan on...broiled it for about 5 minutes...It's been requested several times since then. My husband also loves it and has asked for one made with sausage or bacon or BOTH!~ Thanks for the recipe!

Hey! I made this with rice instead of quinoa (already had some cooked) and it was delish!!! Thanks for posting. I really enjoyed it.
