Hi Paula,
Sorry I'm just seeing your post.
I have to say that I have never had an issue with "soupy" zucchini or squash". I would perhaps slice them ahead of time, salt the slices a bit and place them in a strainer to allow the excess moisture come out?
(Similar to what many people do to eggplant to get the butter juice out.)
You can place a dinner plate upside down over your salted slices and then place something with some weight onto it to help the process along. (it presses the moisture out). Hope this helps?

I've made the same thing in the past and my issue is always the moisture in the squash and zucchinis, how do you keep yours from getting soupy?
