Sorry I'm just seeing your post.
I have to say that I have never had an issue with "soupy" zucchini or squash". I would perhaps slice them ahead of time, salt the slices a bit and place them in a strainer to allow the excess moisture come out?
(Similar to what many people do to eggplant to get the butter juice out.)
You can place a dinner plate upside down over your salted slices and then place something with some weight onto it to help the process along. (it presses the moisture out). Hope this helps?
