Good luck. I showed my husband your picture of the enchiladas and he thought they looked great. When I told him that they were Max's Enchilada's he thumped me on the arm and said I should have named them, "Mike's Enchiladas." (His name) lol You know I taught him how to make them and now he mainly cooks them instead of me.

That is a good idea to measure the chili, first, before freezing it. Let's see if it works as well. I am looking forward to experimenting!

I have a feeling that your chili will work just fine! If you could freeze it in the exact amout you need that would make this recipe really easy. Then, you can call them "Bonnie's & Bill's Enchiladas! :D

Thanks, Gail! No, I followed your recipe to the T; however, I was thinking that I am going to do that next time. My recipe makes a lot of chili, and wouldn't it be great to have the measured amount in a ziplock frozen for the enchiladas? First, we have to see if it will work in your recipe. LOL! The cumin is what makes the chili so good, and it is not spicy hot at all.

Thanks so much for this great recipe. I will definitely be making this for Bill again! :D

Bonnie, you took such an appetizingly good picture of your enchiladas. Did you make them with your chili? They look absolutley delicious!
