max's homemade enchiladas

This recipe came from my brother- in-law over 30 years ago. They are so easy to make that I even taught my husband how to make them. We used to make them together. Since he has retired he now flys solo and gets rave reviews! Note: I like to use one can of Wolf and one can of Hormel Chili.

Ingredients

  • 12-14 small corn tortillas
  • 1 1/2 cups cooking oil
  • 1 1/2 pounds ground beef
  • 2 cans 19 oz wolf brand chili (no beans) or (1) hormel (1) wolf
  • 1 package 8 oz cheddar cheese
  • dash salt and pepper to taste

How To Make max's homemade enchiladas

  • Step 1
    Dip tortillas in heated oil.(just long enough to soften) Avoid getting the oil too hot or you will not be able to roll the tortillas. Place on paper towels.
  • Step 2
    Brown ground beef in skillet. Add salt and pepper to taste. Drain and set aside in small bowl.
  • Step 3
    Heat chili in saucepan. Pour just enough heated chili into a 9x13 baking dish covering the bottom.
  • Step 4
    Fill each tortilla with ground beef and shredded cheese. (About a tablespoon) Roll up and place in baking dish. Pour remaining chili over tortillas.
  • Step 5
    Bake covered with foil for 40-45 minutes at 350 degrees. Remove from oven and top with remaining cheese.
