Max's Homemade Enchiladas

This recipe came from my brother- in-law over 30 years ago. They are so easy to make that I even taught my husband how to make them. We used to make them together. Since he has retired he now flys solo and gets rave reviews! Note: I like to use one can of Wolf and one can of Hormel Chili.

corn tortillas
1 1/2 c
cooking oil
1 1/2 lb
ground beef
2 can(s)
19 oz wolf brand chili (no beans) or (1) hormel (1) wolf
1 pkg
8 oz cheddar cheese
salt and pepper to taste

How to Make Max's Homemade Enchiladas


  • 1Dip tortillas in heated oil.(just long enough to soften) Avoid getting the oil too hot or you will not be able to roll the tortillas. Place on paper towels.
  • 2Brown ground beef in skillet. Add salt and pepper to taste. Drain and set aside in small bowl.
  • 3Heat chili in saucepan. Pour just enough heated chili into a 9x13 baking dish covering the bottom.
  • 4Fill each tortilla with ground beef and shredded cheese. (About a tablespoon) Roll up and place in baking dish. Pour remaining chili over tortillas.
  • 5Bake covered with foil for 40-45 minutes at 350 degrees. Remove from oven and top with remaining cheese.
  • 6NOTE: You can add chopped onions if desired before baking.
