We call them mashed potatoes although we don't use a double boiler to make them. The effect is what I miss from the old diners. I have two ice cream scoops guess I better get one out.
The other veg is sewed I buy some times like that ,frozen and is already chopped in cubes ,it's like a small turnip but taste a bit sweeter ,the potatoes I peel and steam them . I think you would call a double boiler , it's one pot filled with water, then an other attachment to fit over the pot with holes at the bottom to let the steam cook the food . the potatoes I smash them with a little butter like that "Dairy gold butter" and if I have fresh cream pour about 2 table spoons in also ,leaves the potatoes so smooth and to get that nice neat round effect I use a ice-cream scoop ..
Love this. what other veggie is in the peas? I love your photos how you serve your potatoes like a diner would. I remember those days. here everyone just slops them on and usually piled high. The only place that I know of that still does is Gobblers in Gaylord.
