I was lucky enough to get newly dug baby potatoes from a farm stand and decided to make this recipe to showcase them. I used just a little more vinegar for our personal preferences but other than that I wouldn't change a thing.
I am now a convert. I have always preferred a mayo based potato salad but I adore this one!
